Breakfast is quite possibly my favorite meal of the day. Whether it’s french toast, pancakes, oatmeal, fried eggs on toast, an omelet, cereal, or even my favorite Cinnamon swirl breakfast, I’m willing to eat it any time of day. In fact, at this house, breakfast for dinner is a thing at least twice a week, if not more.

One of my go-to breakfast meals has always been pancakes. My kids and husband love pancakes, especially my father-in-law’s “light and fluffy pancakes.” His pancakes are truly top notch. Something we look forward to every time we visit him. Yes, I make them as well, but they’re never quite as good as when grandpa makes them.

Testing Ingredients

Feeling a little discouraged by the reviews I was getting, I decided to try something new. I wanted to come up with a pancake that my kids liked but was a little healthier than grandpa’s version. After trying several “healthy” pancake recipes and “just add water” waffle mixes from Pinterest, (which were all met with poor reviews from my critics), I then turned to the Kodiak Power Cakes Mix that had been sitting in my pantry for several months. When I first saw them at Costco, I was so excited to have a healthier pancake option for my family. But, to be honest, the pancakes (as made from the instructions on the box) didn’t make the cut with my husband and kids. They all said the pancakes were “too flat.”

The Key to Light and Fluffy

I thought the flavor was there but these pancakes definitely needed to be a little lighter in texture. Inspired by my father-in-law’s pancakes, I made a few tweaks to the Kodiak recipe. I’m pleased to report I landed on a much lighter and fluffier pancake. Plus, two thumbs up from my critics!

The key to my light and fluffy Kodiak pancakes is beating egg whites and folding them into the Kodiak cakes mix that I’ve also added milk and egg yolks. This is something my father-in-law does with his pancakes and it’s a game changer. Look how fluffy these pancakes get! As light and fluffy as any buttermilk flapjack or any other buttermilk power cakes. (and 14 grams of protein per serving!)

I also reduce the other liquid (milk) by about a half cup, since I’m adding the eggs, so the mixture it’s too runny.

Light and Fluffy pancakes everyone will love! cakebycourtney.comThe result is not only a pancake I feel good about serving my family, but one that tastes as delicious as it looks.

Enjoy!

  1. Courtney,
So glad I saw this recipe tonight. This weekend I was watching Vanessa’s kids and her 3 year old wanted pancakes. I was so excited that I had the kodiak mix and that I could feed him something fairly healthy when he requested pancakes. They tasted like cardboard. But now that I see your tricks and changes. I think this will be a game changer. I will try again. Thanks!!!

  2. I just made your recipe for the pancakes and they were very good. I made a sugar free blueberry, orange zest with stevia compote and sliced some fresh slice banana on top. DELISH. Thanks for sharing.

  3. Thank you for sharing! I had the same problem with this mix but I can’t bring myself to use other mixes that are full of chemicals! I will try this tomorrow morning! 🙂

  4. Had a large box of the Kodak mix but although it received good ratings, my husband didn’t care for it at all. Searched for a recipe that could change the outcome for the better and I found your marvelous adaption! A success! We loved it! We are focusing on a high fiber low sugar style of eating. The only challenge for us now is to figure out how to comply with ‘Zero Sugar’ and maple flavored agave syrup has 21 gms of sugar per 2 tablespoons. Any suggestions?

  5. I searched for an adaption and came across your technique which won both of us over! Now we can finally use our lonely box of Kodiak mix. I gathered that your recipe was for 4 servings. So I decided everything by 4 to get my calorie and nutrition breakdown. Easy to figure out for two servings too, except for the eggs! Want to make sure I have enough egg whites. So I thought that one extra large egg or two large eggs might work. Has anybody tried it for two people?
Also we are following ‘Zero Sugar’ plan and there are two solutions to avoiding maple syrup or agave maple blend which has a lot of sugar. Either use Smuckers which I have heard is very good and I believe some restaurants use it, but it probably has Splenda in it. Or now the natural foods section or Amazon is carrying a mainly erythitol and monk fruit syrup which is amazing and totally natural and tastes as close as you are going to get to maple syrup with no after tastes. The company also puts out powdered sugar for things like French Toast and sugars for baking. Other tips for lighter pancakes I haven’t tried are using seltzer (fizzy water) and putting egg whites in batter at the end without beating into peaks. But thanks again for your great solution!

      1. Ha! I just realized buttermilk is in the Kodiak pancake mix right? Did they taste like buttermilk pancakes? If so, I guess I wouldn’t need to add
        More buttermilk.

  6. Hello!! I’m going to be trying these soon but I was wondering of you knew how many calories where in them. If not that’s ok! Thanks!

  7. This is just what I have been lookinf for, how to make these more pancake like! Trying them out for Saturday brunch 🙂

  8. Made these pancakes this morning and they were an instant favorite — have been trying to figure out how to fluff them up & this is it! Thx!

    1. If you are referring to WW, you will have to figure out the points yourself. I am not a member.

  9. This recipe is the business! Thanks so much – delicious pancakes with a protein mix – significant improvement over the recipe on the bag! ❤️

  10. I liked the sound of these so I decided to try my hand at them despite never having been able to successfully wipe egg whites. In the end, my family really enjoyed this recipe. I didn’t feel the initial pancakes tasted of vanilla so I ended up quadrupling the vanilla. These really made vanilla pancakes rather than nice pancakes with vanilla flavor, but my dad loved them!

  11. Made exactly as recipe stated. Came out perfect. So fluffy & delicious. This will be my go to Kodiak pancakes From now on. Very easy recipe for such decadent results!
    Thank you!

  12. This was the fluffiest pancakes recipe I’ve ever made! I added chocolate chips and lavender and my kids loved it! Finally, I made a decent pancake! Thanks so much!

  13. Thanks, these were nice and fluffy! I added a little extra milk because it was too thick to spread. Also added some cinnamon which made a big difference in the mix taste.

  14. Thanks for sharing this amazing recipe of Kodaik Cakes. I recently ordered kodaik cake premix from the online store. Definitely I will try your recipe.

  15. I made these for breakfast this morning and they are amazing! I added mini chocolate chips which were a great addition.

  16. Thank you! We are regular kodiak waffle makers but when I tried to make pancakes using their recipe on the back, we were very disappointed. Wanting pancakes, I searched for how to make them better and found your recipe. They were great! Light and fluffy, just like you said. Your recipe will be our go to whenever we want pancakes. Thanks again!

    1. We love these! I’ve made them three times with the following modifications.

Eliminate the vanilla extract. Replace with one scoop of vanilla protein powder. Add blueberries as they are cooking.

This makes 13 quarter cup scoop pancakes.

  17. Made these this morning but decreased ingredients to 1 serving. I also added a few blueberries and topped with sugarfree syrup heated with a few more blueberries. They are delicious! Thank you!

  18. Thanks – My wife and I are just starting a better nutrition plan and wanted to try this one. Do you have the calculations per pancake for calories and proteins? Thanks again

    1. We use the weight watchers app and it lets you add ingredients to a recipe and gives you the nutrition per serving. I think there’s a free trial. 🙂 I don’t work for them. LOL Honest. It’s just been a helpful tool for me.

  19. I am a total fool in the kitchen and I was able to follow this clearly stated recipe / directions. Thank you for the awesome post! My kids loved the fluffier pancakes!

  20. One egg seemed to have the same effect as three. I added less water so they would be thick and that helped a lot. I tried sifting the mix too, but that didn’t cause a difference.

  21. We’ve tried to make Kodiak pancakes work multiple times and always ended up with breakfast coasters. I used your recipe this morning and they’re as gorgeous and fluffy as any pancake I’ve ever made. Excellent recipe. Thank you!! My husband and kids are devouring them for Fathers Day breakfast.

  22. Could you make these with homemade buttermilk instead of regular milk? Didn’t know if that would elevate it or just be no big deal. Thoughts?

  23. I appreciate this recipe- I made the standard back-of-the-box version and added chocolate chips. My kid was cool with it, I was not. They were dense and flat and lacked flavor. I knew I wanted a pinch of vanilla in them but adding the egg and milk is what I need to do. Thanks!

  24. This recipe passes the test for my kids. I am always fighting to get protein down my 7 year old (pickiest eater in the world). And he loved them! Before he ate them, he asked if they were Kodiak. I had to lie and say no. He fell for it and said he wanted another one. Thanks Courtney!

  25. Thank you for posting this recipe, it has been a game changer! I’ve made it twice this week. 1/3 the recipe for just me, going to try it out on my teenage son this weekend. Added lots of cinnamon per another comment and cooked in some sliced banana, perfect for my pancake craving as I continue on a Weight Watcher’s journey.

  26. Super thrilled to try this recipe out. My whole family dislikes these pancakes but they eat it cause they know the benefits. I’m going to surprise them with this recipe and see if they notice the difference. I’m sure it’ll be delicious.

  27. I see this is an old post, but asking anyway. 🙂 Do you (or your father-in-law) have any tricks for waffles? I really love making waffles for the kids and putting them in the freezer for the kids to grab themselves (especially the chocolate version, as they enjoy them without syrup), but one of my kiddos is on the spectrum and doesn’t like how “heavy” they are, but he NEEDS the protein. I’m excited about this recipe tweak for pancakes, but curious if you have any thoughts on waffles. 🙂 Thanks!

      1. Hoping this helps…what I do to make a pancake mix into a waffle mix is add 1 tbl of oil, (oil of preference) for each cup of mix used. Make sure to still spray the waffle iron. ♡♡♡

  28. I also use the lemon Vital Protein Collagen Peptides for a little extra flavor goes awesome with the blueberry kodiak cakes

  29. These are PERFECT! Hubs has the taste buds of a 5 year old when it come to breakfast foods and he has always battled me on healthier options. But we got 2 thumbs way up on these! This will be my new go-to recipe for pancakes!

  30. Whipping the egg whites def makes the pancakes fluffier. But IDK how no matter how much sugar/stevia and salt I add, Kodiak still tastes like nothing! We added bananas and chocolate chips to try to help it. Thanks for posting.

  31. Hello. I just wanted to say huge thanks fot your recipe. It’s a family favorite and I just wanted to say thank you.

  32. Yummmmm this is such a better Kodiak recipe than the box. We added mini chocolate chips and was perfect and fluffy!
