Can you believe we’re already half way through the month of July? There’s no better time for ice cream inspired cakes than in the thick of summer! Taking a bite of ice cream and imaging how to turn it into a cake is my kind of challenge! I think these seven ice cream inspired cake recipe turned out pretty cool 😉
Seven Ice Cream Inspired Cakes You’ll Love
Ice Cream Sundae Cake – chocolate and vanilla cake layers with vanilla buttercream, caramel sauce, chocolate ganache, roasted peanuts, sprinkles and cherries on top!
Rocky Road Cake –- Rich, dark chocolate cake layers, filled with chocolate ganache, marshmallows, peanuts and toffee bits, covered with a silky chocolate buttercream.
Rocky road hasn’t always been my jam. But, Rockwell uses homemade marshmallow cream, and candy bar style toffee and peanuts in their version – and it’s heaven! I knew I had to use the flavor to create a rocky road style cake of my own.
Strawberry Crunch Cake is inspired by my favorite childhood ice cream bar! It’s made up of my go-to strawberry and vanilla cake layers, strawberry crunch filling, and whipped vanilla buttercream. And of course, it’s covered in a shortbread cookie strawberry crunch.
Another favorite is this Easy Mint Chocolate Chip Cake – Rich, dark chocolate cake layers with mini chocolate chips and mint buttercream.
Creamsicle Cake – tender orange cake layers with an orange cream filling and an orange cream buttercream.
Neapolitan Cake – Six layers of chocolate cake, chocolate buttercream, vanilla cake, vanilla buttercream, strawberry cake, and strawberry buttercream.
If you prefer sherbet over ice cream, this is the cake for you! This Rainbow Sherbet Cake has tender yellow cake layers with raspberry lime curd and orange buttercream. Delicious!
