I have quite the handful of summer cakes with this list of my top 3 cakes using lime curd! These might be some new cake flavors you’ve never had before, but I know you’ll love it as soon as you take that first bite! One thing you’ll appreciate from all three of these cakes is that the flavors are not too overbearing. I know lime can be such a strong taste on its own, so I made sure to add just the right amount to each of these cakes!
Lime curd is such a good way to balance out the sweetness of your cake. The tartness of it is perfect with the rich flavors it is paired with. Cake #1 Using Lime Curd: Watermelon Cake with Lime Curd
You can say hello to summer with this Watermelon Cake with Lime Curd! The lime curd in this cake pairs so well with the watermelon flavor! The tartness of the curd helps balance out the sweetness of the watermelon-flavored cake layers so well. I had quite the experience nailing these cake flavors, so when it finally happened I was elated! I hope you enjoy this cake as much as I did once I finally got the flavors right!
Cake #2: Using Lime Curd: Coconut Key Lime Pie Cake
As you know, I am not a huge fan of pie, so turning this famous pie into a cake was so much fun! My Coconut Key Lime Pie Cake is filled with coconut lime cake layers, coconut buttercream, key lime curd, toasted graham cracker, and toasted coconut. Just like in my Watermelon Cake, the tartness of the lime curd helps balance out the sweetness of the overall cake. And the toasted coconut and graham crackers add some nice texture to the cake too! It really does taste like the perfect key lime pie in cake form.
Cake #3 Using Lime Curd: Mojito Cake
My Mojito Cake is another one that would be fun to make for summer! It’s filled with white fluffy cake layers infused with mint and lime, lime curd, and mint buttercream. I know mint and lime can be such strong flavors on their own, so I made sure that these flavors are super subtle in this cake. When you take your first bite the cake melts in your mouth and the mint and lime tickle your taste buds ever so slightly!
