The Best Meal of the Day

Breakfast is quite possibly my favorite meal of the day. Whether it’s french toast, pancakes, oatmeal, fried eggs on toast, an omelet, cereal, or even my favorite Cinnamon Swirl Breakfast Loaf, I’m willing to eat it any time of day. In fact, at this house, breakfast for dinner is a thing at least twice a week, if not more.

One of my go-to breakfast meals has always been pancakes. My kids and husband love pancakes, especially my father-in-law’s “light and fluffy pancakes.” His pancakes are truly top notch. Something we look forward to every time we visit him. Yes, I make them as well, but they’re never quite as good as when grandpa makes them.

A Healthier Light and Fluffy Pancake

Feeling a little discouraged by the reviews I was getting, I decided to try something new. I wanted to come up with a pancake that my kids liked but was a little healthier than grandpa’s version. After trying several “healthy” pancake recipes and “just add water” waffle mixes from Pinterest, (which were all met with poor reviews from my critics), I then turned to the Kodiak Power Cakes Mix that had been sitting in my pantry for several months (btw, no this isn’t sponsored). When I first saw them at Costco, I was so excited to have a healthier pancake option for my family. But, to be honest, the pancakes (as made from the instructions on the box) didn’t make the cut with my husband and kids. They all said the pancakes were “too flat.”

For this recipe, you’ll need Kodiak Pancake Mix (which is found at Costco and most grocery stores), egg yolks, egg whites, vanilla extract and milk.

How to Make Light and Fluffy Kodiak Pancakes

I thought the flavor was there but these pancakes definitely needed to be a little lighter in texture. Inspired by my father-in-law’s pancakes, I made a few tweaks to the Kodiak recipe. I’m pleased to report I landed on a much lighter and fluffier pancake. Plus, two thumbs up from my critics!

The key to my light and fluffy Kodiak pancakes is beating egg whites and folding them into the Kodiak cakes mix that I’ve also added milk and egg yolks. This is something my father-in-law does with his pancakes and it’s a game changer. Look how fluffy these pancakes get! As light and fluffy as any buttermilk flapjack or any other buttermilk power cakes. (and 14 grams of protein per serving!)

I also reduce the other liquid (milk) by about a half cup, since I’m adding the eggs, so the mixture it’s too runny.

The result is not only a pancake I feel good about serving my family, but one that tastes as delicious as it looks.

Light and Fluffy Kodiak Pancakes

A little twist on these easy-to-make, protein-packed pancakes takes them to a whole new level! 
Servings 18 Pancakes

Ingredients
  

  • 2 cups (240 g) Kodiak Protein Mix
  • 1 1/2 cups (360 g) milk
  • 3 eggs, divided
  • 1 teaspoon (4.2 g) vanilla

Instructions
 

  • Combine the Kodiak mix, milk, egg yolks and vanilla in a medium sized bowl. Stir until combined.
  • In a separate bowl, beat the egg whites until stiff peaks form. 
  • Gently fold the egg whites into the Kodiak mixture.
  • Cook the batter on a skillet at medium heat for a couple minutes on each side. I measure each pancake with a ¼ cup measuring cup.

    So glad I saw this recipe tonight. This weekend I was watching Vanessa’s kids and her 3 year old wanted pancakes. I was so excited that I had the kodiak mix and that I could feed him something fairly healthy when he requested pancakes. They tasted like cardboard. But now that I see your tricks and changes.   8. Had a large box of the Kodak mix but although it received good ratings, my husband didn’t care for it at all. Searched for a recipe that could change the outcome for the better and I found your marvelous adaption! A success! We loved it! We are focusing on a high fiber low sugar style of eating. The only challenge for us now is to figure out how to comply with ‘Zero Sugar’ and maple flavored agave syrup has 21 gms of sugar per 2 tablespoons. Any suggestions?

  9. I searched for an adaption and came across your technique which won both of us over! Now we can finally use our lonely box of Kodiak mix. I gathered that your recipe was for 4 servings. So I decided everything by 4 to get my calorie and nutrition breakdown. Easy to figure out for two servings too, except for the eggs! Want to make sure I have enough egg whites. So I thought that one extra large egg or two large eggs might work. Has anybody tried it for two people?
    Also we are following ‘Zero Sugar’ plan and there are two solutions to avoiding maple syrup or agave maple blend which has a lot of sugar. Either use Smuckers which I have heard is very good and I believe some restaurants use it, but it probably has Splenda in it. Or now the natural foods section or Amazon is carrying a mainly erythitol and monk fruit syrup which is amazing and totally natural and tastes as close as you are going to get to maple syrup with no after tastes. The company also puts out powdered sugar for things like French Toast and sugars for baking. Other tips for lighter pancakes I haven’t tried are using seltzer (fizzy water) and putting egg whites in batter at the end without beating into peaks. But thanks again for your great solution!

    1. I haven’t tried it with buttermilk but I don’t think you would need to change the amount.
